The asado takes its origin from the Spanish word asar, meaning to grill. In other words, the asado is a barbecue, in the manner of Argentina. This term is used to refer to the dish itself, but also to allude to its preparation technique.
Most of the time, the asado is made from vacuno (beef).
Why is asado so important to Argentina? The gauchos also used wood from the quebracho tree to cook the meat because it didn't produce a lot of smoke and gives the meat a rich flavour. This formed the basis of the gaucho diet, accompanied with some maté tea.
So this is why they are so important to Argentinians because they have a whole history behind them.

About Chef Martin Liz
Tucked away in downtown Stock Island in an area once saturated by commercial fishermen, shrimpers and herds of livestock, you’ll find a little gem called the Lost Kitchen Supper Club.
Run by Key West native Martin Liz and business partner Mellisa Trader,
the Lost Kitchen Supper Club offers family-style eating with curated themed dinners
based on Liz’s travels and experiences.
The thoughtfully chosen dishes are served up this evening by Liz himself,
prepped at Lost Kitchen and cooked on Lost Beach.
