Spain, France, Portugal, Italy, and Greece represent the foundational heart of Old World winemaking, heavily shaped by diverse Mediterranean microclimates and centuries of indigenous grape cultivation. Together, they lead global production and offer a staggering array of distinct flavor profiles.
Chef Jeniffer Cornell is featured as a headlining culinary talent for the global "5 Continents ~ 5 Wines ~ 5 Stories ~ 5 Chefs ~ 5 Dishes" series, representing European culinary traditions.
While the broader European wine landscape spans Spain, France, Portugal, Italy, and Greece, Chef Cornell's specific storytelling segment anchors on —pairing timeless regional narrative with classic Old World cuisine

This Mediterranean-inspired multi-course dinner, curated by Chef Jennifer Cornell of Small Chef at Large, celebrates the vibrant flavors of Southern Europe. Known for her seasonal, organic approach and "spot-on" food styling, Chef Jen brings her world-class expertise to a menu that pairs regional delicacies with iconic wines from Spain, Portugal, France, Italy, and Greece.
The Menu
Greece: The Opening Spark
Dish: Crispy Phyllo Triangles with Whipped Feta, Local Honey, and Toasted Sesame.
Wine: Assyrtiko from Santorini. The evening begins with a crisp, mineral-forward white wine that cuts through the richness of the salty feta and sweet honey, evoking the Aegean breeze.
Spain: Coastal Elegance
Dish: Pan-Seared Key West Pink Shrimp with Garlic, Pimentón, and Sherry Reduction on a bed of Saffron Risotto.
Wine: Albariño from Rías Baixas.
Chef Jen utilizes "seafood that is currently running" to create this Spanish-inspired masterpiece, paired with a zesty Albariño notes of white peach and sea salt.
France: Provencal Harvest
Dish: Herb-Crusted Lamb Lollipops with Ratatouille Napoleon and Balsamic Glaze. Wine: Cotes de Provence Rosé. A nod to the French Riviera, this course features perfectly rendered lamb paired with a dry, pale pink Rosé that mirrors the floral herbs of the dish.
Italy: The Heart of the Meal
Dish: Homemade Pappardelle with Wild Mushroom Ragu and Shaved Black Truffles. Wine: Barolo or Chianti Classico.
This rustic yet refined course highlights the "conviviality and ease" of Italian dining, paired with a bold, structured red that stands up to the earthy truffles.
Portugal: The Sweet Finale
Dish: Traditional Pastéis de Nata (Custard Tarts) with Cinnamon and Port-Soaked Berries. Wine: 10-Year Tawny Port.
Ending the night with a Portuguese classic, the caramelized custard is elevated by the nutty, dried fruit notes of a chilled Tawny Port.
Chef Jen, an award-winner at the Key West Food & Wine Festival, specializes in creating "unforgettable experiences" where every course wows the palate.
This dinner is designed to be more than just a meal; it is a journey across the Mediterranean, crafted with local ingredients and global soul.
