Imagine yourself in your grandmother’s kitchen, watching intently as she chops onions and peppers, measures mysterious spices, and expertly sifts them into a pan sizzling on an old-fashioned stove.

Her voice rises and falls in rhythmic cadence as she explains that she learned the recipe she’s preparing from her mother — that it has special meaning to your family and your culture, that one day you’ll share its secrets with your own children and grandchildren. 


The kitchen is warm with enticing aromas, with a sense of timeless comfort and tradition. You lick your lips in anticipation, eager to taste this dish that’s seasoned with such a rich heritage.

A Key West favorite that perfectly blends southern comfort with island flair. Tender, flaky grunt fish is lightly seasoned and pan-seared, then served atop a bed of creamy, buttery grits. The dish is finished with a drizzle of savory sauce, offering a mouthwatering balance of rich, smooth flavors and the fresh, light taste of the sea. It’s a true celebration of the island’s coastal charm and down-home cooking.


MENU:  Sangria, Housemade Plantain Chips & Chimichuri, Bollos, Grits-N-Grunts, Key Lime Pie and a special selection of wine to pair with the menu!

An event spotlighting Oceania, Australia, Tasmania, and Chef Dave Fuhrman sets a deeply immersive, sensory journey. By pairing Chef Fuhrman’s renowned expertise in luxury presentation and high-end execution (honed at Great Events Catering  with the wild, isolated terroirs of the Southern Ocean. 


Tasmanian wine is renowned for its premium cool-climate styles, driven by the island’s long ripening seasons and crisp maritime breezes. 


The region excels in producing world-class Pinot Noir, Chardonnay, and traditional-method sparkling wines, alongside aromatic whites like Riesling and Sauvignon Blanc.

Oceanian Island Flavors at the Audubon House

Join Chef David Fuhrman for an exclusive culinary journey through Oceania, hosted within the lush, emerald canopy of the Audubon House and Tropical Gardens. Known for creating "resort-class dining experiences" that blend sophisticated technique with vibrant storytelling, Chef Fuhrman brings the spirit of the South Pacific to the heart of Old Town Key West. 


The Menu

The evening features a curated multi-course menu inspired by the diverse terroirs of Australia, New Zealand, and the Pacific Islands. Guests will enjoy:

  • Pristine Seafood: Fresh catches prepared with Polynesian and Melanesian influences, mirroring the coastal spirit of the Florida Keys.
  • Oceanic Wine Pairings: A selection of crisp Sauvignon Blancs from Marlborough, bold Shiraz from the Barossa Valley, and boutique sparkling wines that highlight the unique viticulture of the region.
  • Island Aromatics: Dishes infused with ginger, coconut, and citrus, designed to complement the tropical breezes of the Audubon gardens.
